Friday's Food Fix - Halloumi & Cashew Salad

I love halloumi!  And this salad is a great way to use any leftovers for salads the next day.

Ingredients:

• Bunch of baby spinach
• Sliced sun-dried tomatoes
• Sliced button mushrooms
• Sliced avocado
• Handful of cashews and pumpkin seeds
• Diced halloumi
• Blob of coconut oil

Method:

• Fry the holloumi in coconut oil until golden.
• Throw the rest of the salad together while this is cooking.
• When holloumi is done, toast the cashews and seeds in the oil left in the pan until golden.
• Sprinkle holloumi, nuts and seeds over you salad.
• Done!
