Friday's Food Fix - Paleo Banana Pikelets

This is an oldie, but a goodie, and soo easy!  An awesome ‘sometime’ breakfast.   This usually makes enough for two breakfasts for me.  All you need is:

  • 1 free range egg
  • 1 tbsp of almond butter
  • 1 banana

Blitz it together and fry in coconut oil...and that’s it!  While my pikelets are cooking I put about a cup of frozen berries in a pot with a blob of coconut cream, and let it reduce to my version of a coulis.  They magically seem to be ready at the same time.   

Serve pikelets with berry coulis, a sprinkle of LSA if you like it, and a dollop of coconut cream.  Yum!!  ​

My recent baking efforts are these little muffins.  Another great breakfast on the go idea - I heat them up and have them with a sprinkle of home made granola and blob of greek yoghurt...yum!  but they would be a great little snack to.  Enjoy ;-)

I love these little guys and they are perfect for breakfast on the go.  I keep mine in the freezer and grab one out when needed.  Pumpkin takes no time at all to steam or I throw extra pumpkin in when roasting veges and use it for whipping up a batch.  Enjoy ;-)

Don't you hate it when every one around you is talking about getting takeaways for dinner and you suddenly want it really badly!!  This happened to me last night, but instead of stopping off at the local chippies I decided to make my own and was surprised at how quick and delish it was!  This would make a great alternative to Friday nights Fish and Chips.

Ingredients:
Chips
  • Two kumera thinly sliced
  • 1 tsp of dried thyme
  • 1 tsp of dried smoked paprika
  • Salt and pepper (I used garlic salt)
  • Melted coconut oil

I'm not going to lie, this one is slightly more time consuming than your normal pizza base, but so much better for you and a great way to still enjoy this treat if you are cutting out breads from your diet.  I normally make a bigger batch and freeze some bases.

I’m sure you have all been following Mandy’s Paleo diet. The assumption is to eat like our ancestors which means reduced grains or simply put, our modern day complex carbohydrates – one being - PASTA! I love a dirty pasta (especially covered in about 4 cheeses!) but on reflection it has very little nutritional value. I thought all was lost until I found this very clever recipe.

Ingredients:
  • 6 medium sized Courgettes (you might say Zucchini if you are Kiwi).
  • 500 gram Mushrooms (any kind).
  • 4 cloves garlic.
  • Coconut oil for frying.

I love halloumi!  And this salad is a great way to use any leftovers for salads the next day.

  • Bunch of baby spinach
  • Sliced sun-dried tomatoes
  • Sliced button mushrooms
  • Sliced avocado

This is honestly the yummiest soup I have tried...and I'm not just saying that cause I made it  You may have seen earlier in the week my attempts at cutting pumpkin (thanks for all the suggestions, they were awesome!) and the result was a delicious soup shared with five.
